Tea Set Hand Rolled Truffles
I have been working for some time to find the fourth tea truffle to create this set. Bouncing back and forth with different ideas. Finally the ruby chocolate truffle was perfected to round it out. So the set is made up of one milk, one dark, one white, and one ruby chocolate truffle--London Fog, Green Tea, Chai Fig, and Spiked Blood Orange Black Tea.
London Fog is made with Lavender Earl Grey loose leaf tea and lavender and lemon essential oils in a Guittard fair trade certified milk chocolate ganache. The center is hand rolled in organic cocoa powder, dipped in milk chocolate, and topped with candied lemon peel
Green Tea is made with an organic matcha Guittard fair trade certified dark chocolate ganache. The center is hand rolled in organic match powder, dipped in dark chocolate, and garnished with a sprinkling of organic matcha powder.
Chai Fig is made with loose leaf chai black tea and handmade fig jam in a Guittard fair trade certified white chocolate ganache. The center is hand rolled in powdered sugar, dipped in white chocolate, and garnished with candied ginger
And the new addition--the Spiked Blood Orange Black Tea--is made with loose leaf English Breakfast Tea, fresh squeezed blood orange juice, and Colorado local Deviation Blood Orange Gin in Callebaut fair trade certified ruby chocolate. The center is hand rolled in organic cocoa powder, dipped in ruby chocolate, and garnished with candied blood orange peel.
