I am constantly trying to find ways to avoid waste and I unfortunately see a lot of bananas getting tossed. So I decided to use a whole lot of them and make banana bread… marzipan! I created my own banana powder by dehydrating overripe bananas — about 4 per batch — and processing them into a fine powder. That fine powder is then combined with freshly toasted walnuts, cinnamon, and Madagascar vanilla to create a delectably crumbly marzipan that you'll swear is a piece of homemade banana bread. Almost an ounce of marzipan is then pressed into a fluted mold, dipped in milk chocolate, and finished off with a candied walnut crumble.
Not bread. Just really, really convincing.
